How to make a good chicken bourguignon

Here is the simplified recipe for Poulet Bourguignon, a chicken stew in red wine with mushrooms, onions and bacon bits. Easy to make and perfect to serve with pasta or rice.

We have replaced beef with chicken to prepare a light meal compatible with your diet.

Ingredients for 6 people: 
  • 1 kg of chicken
  • 2 chopped onions
  • 250g mushrooms
  • 2 minced garlic cloves
  • 3 tablespoons of flour
  • 20 cl of red wine
  • 250 ml defatted beef stock
  • 1 bouquet garni (thyme, bay leaf)
  • 3 teaspoons olive oil
  • 80 g of bacon
  • salt pepper
Preparation :

In a casserole, heat 1 teaspoon of olive oil then add the bacon bits and pieces of chicken to brown for a few minutes and set aside.

Add the rest of the olive oil then brown the onion and garlic for 5 minutes, then add the mushrooms, thyme, bay leaf. Season with salt and pepper and cook for another 3 minutes.

Then add the chicken pieces and the bacon bits then sprinkle with flour and stir.
Pour in the wine and broth, stir then cover and cook for 25 minutes.

Finally, serve your chicken bourguignon hot with pasta or rice, or simply a piece of freshly baked bread .
