It’s that time of year when the sun is shining and barbecues are firing up. In my family, every summer weekend felt like a Fourth of July celebration. My mom was on the grill making her famous BBQ, and my dad always whipped up the best desserts. In the recipe below, I’m sharing a no-bake cheesecake recipe similar to my dad’s!
To start, we make a graham cracker crust by crushing graham crackers in a ziplock bag and mixing them with sugar and melted butter. Then, we press the mixture tightly into a pan and refrigerate while we prepare the cheesecake filling. This recipe uses sour cream, which adds flavor and lightness to the cheesecake. Finally, we top it with red and blue fruit to celebrate the Fourth of July in taste and style. Here’s how to make it:
Ingredients:
Crust:
- 1½ cups finely ground graham cracker crumbs
- ¼ cup sugar
- 5 tablespoons melted butter
Cheesecake:
- 16oz softened cream cheese
- 1 cup sour cream
- 1½ cups sugar
- 2 teaspoons lemon juice
- 1½ teaspoons vanilla extract
Toppings:
- 3 cups sliced strawberries
- 1 cup blueberries
Instructions:
- In a large bowl, mix graham cracker crumbs, sugar, and melted butter until fully incorporated.
- Press the mixture evenly into a casserole dish, making sure to pack it tightly. Refrigerate.
- In a large bowl, beat the cream cheese, sour cream, sugar, lemon juice, and vanilla extract together using an electric mixer. Alternatively, you can use a whisk and wooden spoon.
- Spread the cream cheese mixture evenly over the crust.
- Use blueberries to create a star pattern in the top left corner of the cheesecake.
- Create the red stripes of the flag by overlapping sliced strawberries.
- Chill the cheesecake in the refrigerator for at least two hours before serving.
