EGG BAKE WITH BROCCOLI, HAM, AND MOZZARELLA

This low-carb casserole is a hearty and versatile meal that can be enjoyed for breakfast, lunch, or dinner. Packed with broccoli, ham, and mozzarella cheese, this dish is held together by beaten eggs and seasoned with Spike Seasoning for added flavor. It’s an easy recipe that can be made ahead of time and stored in the refrigerator for a quick and delicious meal.

INGREDIENTS

10 large eggs, beaten

6 cups broccoli florets, blanched for 2 minutes and drained

1 cup grated mozzarella cheese

2 cups diced ham

1/3 cup thinly sliced green onions (optional)

Freshly ground black pepper, to taste

1 teaspoon all-purpose seasoning blend (such as Spike Seasoning)

INSTRUCTIONS

Step 1: Preheat the oven to 375°F (190°C) and lightly grease a 9×12-inch casserole dish with nonstick spray.

Step 2: Bring a medium-sized pot of water to a boil.

Step 3: Dice the ham, slice the green onions, and measure the mozzarella cheese.

Step 4: Add the broccoli to the boiling water and cook for 2 minutes. Drain the broccoli in a colander.

Step 5: In the prepared casserole dish, layer the broccoli, ham, mozzarella cheese, and green onions (if using). Season with Spike Seasoning and black pepper. Pour the beaten eggs over the top.

Step 6: Using a fork, stir the mixture until everything is coated in egg. Bake in the preheated oven for 35-45 minutes, or until the egg is set and the top is lightly browned.

Step 7: Once done, remove from the oven and serve with sour cream, if desired. This casserole can be stored in the refrigerator for up to a week and reheated in the microwave for a quick and easy meal.
