Semifreddo with amaretti biscuits: the recipe for a fresh and super gourmet dessert

Amaretti semifreddo is a delicious spoonful dessert perfect for the hottest summer days. Easy and very quick, it is prepared without lighting a fire or an oven: first, the egg yolks are mixed with the sugar, until the mixture is light and fluffy. Add the crumbled amaretti biscuits, the amaretto liqueur and finally the fresh whipped cream is added, mixing gently and with movements from bottom to top to avoid disassembling the mixture. After resting for a few hours in the freezer, the result is a fresh and elegant dessert with a slightly retro taste, ideal to serve at the end of a meal for a family lunch or a dinner with friends.

The semifreddo amaretti can be prepared in advance: just keep it in the freezer and then take it out just before serving. You can decorate it with tufts of whipped cream and amaretti cookies, like in our version, or add the ingredients of your choice, such as dark chocolate chips or slivered almonds, for example. Instead of amaretto, you can use rum or maraschino and replace half the cream with mascarpone. For an even more gourmet dessert, you can add around 60 g of chocolate chips to the mixture.

It is important to use very fresh and preferably organic eggs. We used a loaf pan to cut the semifreddo into slices right on the table, but you can also do it in elegant individual portions.

How to prepare an amaretti semifreddo

Step 1
First separate the egg whites from the yolks 1.

Add the sugar to the latter 2.

Whisk egg yolks and sugar for about 7-8 minutes until light and fluffy 3.

Put the amaretti cookies in a bowl and coarsely crumble them 4.

Put the dessert cream in a bowl and whip it with an electric whisk 7.
