Ash pasta is a first espresso, perfect for surprising unexpected guests with a simple but tasty and enveloping dish, a richer variant of the Gorgonzola pasta. It is prepared with cream, Gorgonzola and chopped Taggiasca olives, whose consistency and color are reminiscent of ash.
To bring it to the table, all you have to do is roughly chop the olives, previously pitted, then heat the cream in a pan with the Gorgonzola cut into cubes until a soft sauce is obtained in which you can dip the chopped mixture into the pasta, al cooked dente. ; Finally, you have to mix everything and serve with freshly ground black pepper and a few whole olives: it takes less than half an hour to prepare.
This is a very versatile recipe that you can customize to your liking. In our version we have chosen Penne Rigate, but you can also use Sedanini, Rigatoni or Mezze wrappers, short shapes that go better with creamy spices. We wanted to use Taggiasca olives, which are characterized by a sweet and fruity aroma, but you can choose the type of olive you prefer: the Moresca di Sicilia and the Itrana Lazio also taste great.
If you wish, you can also add a pinch of grated Parmesan to make it even more appetizing; If not intended for children, add a generous pinch of chopped chili pepper for a spicy touch that goes well with the sweetness of the gorgonzola.

How to prepare ash noodles
Step 1
Pit the Taggiasca olives and chop finely with a knife

. Meanwhile, cook the pasta in boiling salted water.

Cut the Gorgonzola into small pieces

Heat the cooking cream over low heat in a non-stick pan or saucepan

Add the Gorgonzola cut into pieces

Let everything melt over low heat, stirring constantly, for 2-3 minutes

Add the chopped olives and mix

Drain the pasta al dente and add it to the pan with the sauce

Transfer the noodles to serving plates. Garnish with a few whole olives and freshly ground pepper and serve hot

Advise
You can make an even more enjoyable version by boiling the pasta for 6-7 minutes, then mixing it with the spices, seasoning with dried or fresh aromatic herbs and putting everything in an oiled pan. Sprinkle a handful of breadcrumbs on the surface and place in the oven on grill mode until a golden, crispy crust forms.
