Ingredients:
– For the cake batter:
170 g of flour
10 g of cocoa powder
5 g of baking powder
80 g of sugar
10 g of vanilla sugar
3 egg yolks
100 g of melted butter
100 g of sour cream or greek yogurt
200-300 g of frozen and pitted cherries (or any other berries you like)
– For the meringue:
3 egg whites
1 tsp of lemon juice
1 tsp of vanilla sugar
130 g of powdered sugar
10 g of corn starch
Directions:
1. Sift and mix flour, cocoa powder and baking powder. Then add sugar and vanilla sugar.
2. Stir in eggs, butter and sour cream.
3. Stir well to blend all of the ingredients and pour the batter into a cake mold coated with baking paper.
4. Now place cherries on top.
5. Bake in a pre-heated oven at 150° for 40-45 minutes.
6. Now make the meringue by whisking egg whites with lemon juice for 3 minutes.
7. Meanwhile, stir in vanilla sugar and powdered sugar a little bit at a time.
8. Now whisk at high speed for 10 minutes, lastly add corn starch.
9. Place the mixture into a piping bag and fill the cake.
10. Bake again at 150° for 20-25 minutes.
