Ingredients:
- 1 chicken
- 5 apples
- 3 lemons
- 2 potatoes per person
- 1 glass of brandy
- Thyme
- Olive oil
- Shall
- Pepper
- Preparation:
- Clean the chicken well, and if you have not previously requested it at the butcher shop, debone it.
- Peel the apples, wash them well and cut them into quarters that you will place inside the chicken. Then, sew the chicken with kitchen string or use toothpicks to seal the opening.
- Place the chicken on an oven-safe tray and preheat the oven to 220º C.
- In a bowl, mix the glass of brandy with the freshly squeezed lemon juice, a splash of olive oil and the thyme. Pour this mixture over the chicken.
- Peel the potatoes, cut them into pieces and distribute them around the chicken.
- Put the chicken in the oven. It should cook for almost two hours, but once you notice it browning, reduce the temperature to 180º C.
- Remember to baste the chicken with the juices from the tray approximately every 15 minutes to prevent it from drying out.
