1. Salad with Chicken Breast, Tomatoes, and Green Peas
Ingredients:
- Boiled chicken breast – 300 g
- Tomatoes – 3 pcs
- Boiled eggs – 3 pcs
- Canned green peas – ½ can
- Green onions – a small bunch
- Salt to taste
- Sour cream mixed with mayonnaise (for dressing)
Preparation: Cut the chicken breast into small cubes. Add chopped tomatoes (without seeds), eggs, finely chopped green onions, peas, and salt. Dress with sour cream mixed with mayonnaise. Enjoy!
2. “Horn of Plenty” Salad (for 2 servings)
Ingredients:
- 1 egg
- 30 g soft cheese
- 50 g chicken breast
- 6 prunes
- 6 walnuts
- 2 tbsp sour cream
- Salt, mustard
- 50 g cucumber
- 5 g pine nuts
- Dill and parsley
Preparation: Beat the egg with salt, pepper, and grated cheese. Fry a thin pancake on both sides. Cut it in half and roll into cones. Cut cucumber, boiled chicken breast, and prunes into strips. Chop the walnuts coarsely. Mix everything, dress with sour cream mixed with mustard and salt. Fill the cones with the salad so it “spills out” of the “Horn of Plenty.” Decorate with dill, parsley, pine nuts, and a light mayonnaise net.
3. Chicken Salad “Grape Bunch”
Ingredients:
- 400 g smoked chicken fillet
- 300 g hard cheese
- 300 g seedless dark grapes
- 3 boiled eggs
- Mayonnaise
- Parsley
Preparation: Layer the salad in the shape of a grape bunch: egg whites, chicken fillet, egg yolks, cheese — spreading each layer with mayonnaise. Cut the grapes in half and decorate the top of the salad. Add a sprig of parsley before serving and chill.
4. “Bride” Salad
Ingredients:
- 300 g smoked chicken
- 4 eggs
- 1 processed cheese (“Druzhba” or similar)
- 2 potatoes
- Onion (to taste, preferably red or green)
- Mayonnaise
Preparation: Boil the eggs and potatoes. Cut the chicken into small pieces. Grate potatoes on a coarse grater, cheese on a fine grater, and separate egg yolks and whites. Marinate finely chopped onion in a mixture of 1 tbsp vinegar and hot water for 10–20 minutes. Layer the salad (grating each ingredient over the plate for an airy texture) with a mayonnaise net between layers:
- Chicken + mayonnaise
- Onion
- Potatoes + mayonnaise
- Egg yolks
- Processed cheese + mayonnaise
- Egg whites
Optionally repeat the layers. Let the salad soak for a few hours.
5. “Sated Godfather” Salad
Ingredients:
- 1 chicken fillet
- 1 can of canned pineapple
- 100 g Dutch cheese
- 100 g mushrooms (champignons)
- 5 walnuts
- Cilantro
- Mayonnaise
Preparation: Boil the chicken fillet with salt, cool, and cut into cubes. Slice and fry the mushrooms until golden. Drain and dice the pineapple. Toast and peel the walnuts. Grate the cheese on a coarse grater and finely chop the cilantro. Mix all ingredients, add mayonnaise, and decorate as desired.
