- 100 ml of Sunflower or Olive Oil.
- 50 ml of Vinegar (9%).
- 2 Large Onions (finely chopped).
- 2-3 Carrots (grated, optional for sweetness).
- Salt and Peppercorns to taste.
- 3-4 Bay Leaves.
Preparation:
- Prepare the Fish: Cut the cleaned mackerel into rounds (about 3–4 cm thick). Salt them lightly and let them sit while you prepare the sauce. 🔪
- The Vegetable Base: In a large, deep pan or pot, sauté the onions and carrots in the oil until they become soft and translucent.
- The Sauce: Pour in the tomato puree and vinegar. Add the bay leaves and peppercorns. Let the mixture simmer for about 10 minutes to allow the flavors to meld. ⏳
- The Slow Cook: Gently place the fish pieces into the sauce. Ensure the fish is completely covered by the liquid. Cover the pot and cook on the lowest heat possible for about 2 to 3 hours.
