Rinse the petals gently in cold water and let them drain. Make the syrup In a large pot, dissolve the sugar in water over low heat. Add the lemon juice and bring to a gentle boil. Add the petals Add the prepared rose petals to the boiling syrup. Stir gently and simmer on low heat for about 25–35 minutes, stirring occasionally.
