Charlotte Chateau, a lover of almond croissants and who manages the Instagram account @pariswithcharlotte , has created her own homemade gourmet variant by reusing yesterday’s croissants.
In fact, she shares this simple but delicious almond croissant recipe , a specialty made with almond cream. To be redone at home, you will immediately receive the necessary ingredients and the preparation phases.
How to prepare crispy homemade almond croissants from the croissants of the day before?
To have ultra gourmet and anti-waste croissants , try this recipe dedicated to 4 people:
- 4 croissants from the day before
- 60g softened butter
- 60g of sugar
- 1 egg
- 1 capful of rum: optional
- 60 g ground almonds
- 1 tablespoon of flour
- A handful of slivered almonds
- Powdered sugar
For the syrup:
- 200ml water
- 100g sugar
The preparation steps to follow to the letter
- Put the softened butter and sugar in a bowl and blanch them with a fork. Then add the egg and beat vigorously.
- Add the ground almonds, the flour and if you want the rum then mix everything until you get your almond cream.
- Then prepare a sugar syrup in a saucepan by mixing 100 g of sugar in 200 ml of water.
- Cut the croissants from the day before in half and moisten them with the syrup. Then garnish with almond cream and close them like small sandwiches.
- Then apply a layer of cream on top and cover all the edges to prevent the croissants from drying out.
- Arrange the croissants on a baking sheet and cover them with slivered almonds.
- Then put them in the oven for a few minutes to brown them.
- Take the croissants out of the oven and dust them with icing sugar before serving.
