If you say it’s tasty – you almost didn’t say anything..

“Enchiladas” is a traditional Mexican food, which is very simple to prepare, it is delicious, appetizing and everyone likes it. Enchiladas are made from home-made thin strips and are filled with juicy and flavorful meat. Lobster rolls are baked in a tasty tomato sauce and topped with cheese – a foodie frenzy that will make you drool. If you wish, you can prepare the quick version of this Mexican delicacy, using commercial glue. Enjoy this delicious food with a spicy taste!

INGREDIENTS 

– 800 g of minced meat of any type

– 400 g of tomatoes in their own juice (or tomato paste dissolved in water)

– 1 onion

– 2-3 cloves of garlic

– 300 g of cheese (I used Gouda cheese)

– 7 home glues

– greens (parsley or coriander)

– ground black pepper, ground hot pepper, ground coriander, cumin and oregano – to taste

– sugar and salt to taste

– oil for frying

GLUE INGREDIENTS

– 3 glasses of flour (or 480 g + 50 g for sprinkling)

– 1 glass of ice cold water

– 100 ml of oil

– 1 teaspoon of salt

METHOD OF PREPARATION

1. The adhesives . Place the flour in a bowl. Make a well in the middle and pour in the oil and cold water. Salt to taste. Mix the dough with the spoon, then knead it with your hands.

2. Place the dough in a plastic bag and let it rest for at least 3 hours.

3. Divide the dough into 2 parts and roll them into baguettes.

4. Cut the dough into egg-sized pieces and roll them out.

5. Fry the leeks in a hot pan without oil.

6. Turn the glue over to the other side as soon as it bubbles. Do not dry the glue too much.

7. Place the sticks on a flat plate. When all the glues are ready, put them in a bag to sweat – the glues are ready. It keeps well in the fridge in the same bag.

8. Prepare the tomato sauce: fry the chopped onion in hot oil. Add the tomatoes, chilli, minced garlic, ground coriander, salt and sugar. Keep the sauce on fire for 5-7 minutes, stirring periodically.

9. Fry the minced meat in a hot pan with oil for 15 minutes. Season with salt and remaining spices and cook for 5 minutes. Add the parsley to the pan and stir. The filling is ready.

10. Place the meat filling on a baking sheet and sprinkle plenty of grated cheese on top. Roll the glue into a roll.

11. Do the same with the other glues. Put some of the sauce in a baking dish (22*22 cm) and place the rolls carefully.

12. Pour the remaining sauce on top.

13. Sprinkle the entire surface with grated cheese.

14. Bake the enchiladas at 180 degrees until the cheese melts. Serve the dish hot with sour cream and sprinkled with chopped greens.
