It’s quick and easy to prepare and perfect for serving at any meal – whether it’s brunch, lunch, or dinner. With the fresh herbs and mozzarella cheese, this recipe has a delicious Italian flair that will bring everyone together. You simply must try it! INGREDIENTS: 2 beaten eggs 1 tablespoon butter 4 sliced tomatoes 1 minced clove of garlic 1/2 cup chopped onion 2 tablespoons chopped fresh oregano 2 cups shredded mozzarella cheese, plus extra for sprinkling over top 6-7 chopped basil leaves 1/2 teaspoon black pepper 1-2 teaspoons salt DIRECTIONS: Step 1: Place the sliced tomatoes on plates and lightly sprinkle them with salt. Let them sit for at least 10 to 30 minutes. Step 2: Melt the butter in a small skillet over medium-high heat. Add the onion and garlic to the skillet and cook for about 8 minutes, stirring often, until the onions have softened. Transfer the onion/garlic mixture to a medium-sized bowl. Add the cheese, eggs, herbs, and pepper. Mix well. Step 3: Drain the water from the plates with the tomatoes. Gently blot the tomatoes with a paper towel to remove any excess moisture. Step 4: Arrange the tomato slices in a single layer on a greased pie pan. Top with around 1/4 cup of the cheese mixture. Repeat the layers with the remaining tomato slices and cheese mixture, ending with a layer of tomatoes. Sprinkle the final layer with mozzarella cheese. Step 5: Bake the pie for about 30 to 40 minutes at 375 degrees or until the edges are lightly browned. Remove from the oven and let the pie sit for about 5 to 7 minutes. Step 6: Serve and enjoy!
