The Romagna donut is a rustic homemade dessert – also called brazadela – with an unexpected shape and texture. Despite its name, the Brazadela actually appears without the classic center hole and with a firm and dry interior. An old-fashioned dessert, simple in execution and taste, prepared with few ingredients that are often already in the pantry. Tasty and authentic, it’s perfect for afternoon tea or a morning cup of latte; or, for the more daring, dipped in a little red wine, as local tradition dictates. Learn how to prepare it perfectly.

How to prepare the Romagna donut

Step 1
Gather the butter in a saucepan
1
and melt it gently over low heat without frying (or melt it in the microwave). Let cool down.

Step 2
Crack the room temperature eggs into a bowl and beat them with the sugar.
Add the melted butter 2
and mix.

Step 3 Add
the Vinsanto and the grated lemon peel

Step 4
Put the sifted flour and yeast together
4
and mix a little with a fork and then with your hands until you get a firm and homogeneous dough.

Step 5
Stretch it into a sausage shape, then place it on a baking sheet and flatten it slightly with your hands.

Step 6
Brush the surface with a little milk and then sprinkle with powdered sugar
6
. Bake in a static oven at 180°C and cook for about 40 minutes, monitoring the degree of browning.

Step 7
Once the cake is ready, remove it from the oven, let it cool completely and serve it in slices.

Tip
Since you have to preserve the peel, use an organic lemon, i.e. not chemically treated. Wash it thoroughly under cold running water and dry it with an absorbent cloth or paper towel. Remove the peel using a suitable grater, being careful not to also remove the white part of the fruit: it is slightly bitter and would affect the final result.

It is also possible to flavor the Romagna donut with another liqueur of your choice; If this is already consumed by the little ones, avoid it straight away.

For an even tastier but less traditional version, you can also add chocolate chips to the dough.

You can enjoy your sliced dessert with a hot, creamy cappuccino; You can also grill the slices in the oven for a few minutes and spread homemade apricot or cherry jam over them.

Storage
The Romagna donut can be stored under a glass cover or sealed in a tin can for 1 to 2 weeks. If you wish, you can slice it and freeze it in the freezer: just put it back in the oven for ten minutes to enjoy the dessert as if it were freshly made.
