SPAGHETTI CARBONARA

Ingredients:

3 large eggs, at room temperature

1 pound spaghetti

2 garlic cloves, minced

6 slices pancetta or bacon, chopped

Freshly ground black pepper

1 cup grated Parmesan cheese

How to make spaghetti carbonara:

Step 1: In a bowl, whisk together the eggs, Parmesan cheese, and black pepper until well blended. Set aside.

Step 2: Cook the pancetta or bacon in a large skillet over medium heat until crispy. Remove from the pan and set aside. In the same pan, add the minced garlic and cook for about 1 minute until fragrant.

Step 3: Cook the spaghetti according to the package directions in a large pot of salted boiling water until al dente. Reserve about 1 cup of cooking water, then drain the pasta.

Step 4: Add the hot pasta to the pan with the garlic and toss to coat. Remove from heat and pour in the egg mixture, stirring quickly to coat the pasta evenly. If the mixture is too thick, add reserved cooking water a little at a time until the desired consistency is reached. Add the pancetta or bacon and toss well.

Step 5: Garnish the spaghetti carbonara with chopped parsley or additional Parmesan cheese before serving. Enjoy!

Tips:

  • Let the eggs come to room temperature before starting to cook.
  • Be sure to cook the pasta until al dente.
  • Do not rinse the pasta as the starch helps to thicken the sauce.
  • The heat from the pasta will cook the egg mixture, so be sure to remove from the heat before adding the eggs.
  • Gradually add reserved cooking water to the sauce until the desired consistency is reached.
