In a pan add the olive oil and garlic and cook for a few minutes. Add the spinach and cook until wilted. Set aside and let it cool2. In a mixing bowl add the ricotta, cheese, parmesan, green onions, egg, salt, and pepper and mix until combine well.3. Unroll the puff pastry roll on the cutting board and cut it into three rectangles. Spread the prepared mixture on one side and roll up tightly.4. Cut it into three pieces and transfer it to the baking tray covered with parchment paper. Brush rolls with the egg yolk and sprinkle with sesame seeds.5.
