Looking for a simple yet delicious dinner idea that your family will love during colder months? Try this creamy and flavorful chicken noodle casserole, which can also be turned into a complete meal by adding cooked veggies.
Ingredients:
- 12 oz package of egg noodles, cooked and drained
- 2 cans (10 oz each) of chunk chicken breast, drained or pre-cooked rotisserie chicken
- 2 cans (10 oz each) of cream of chicken soup
- 1 cup of mayonnaise
- 1 cup of milk or water
- 1/2 onion, finely chopped
- 2 cups of shredded cheddar cheese
- 1 1/2 cups of frozen carrots and peas
- 1 cup of panko bread crumbs
- 1 1/2 cups (1 stick) of melted salted butter
Instructions:
- Preheat your oven to 350°F and grease a 9×13 inch baking dish with nonstick cooking spray.
- In a large mixing bowl, combine the chicken, cream of chicken soup, and mayonnaise. Then, add the milk (or water), chopped onions, shredded cheese, frozen peas and carrots, and stir everything together.
- Add the cooked egg noodles to the mixture and stir until well combined.
- Pour the mixture into the greased baking dish.
- Sprinkle the top with panko bread crumbs.
- Pour the melted butter evenly over the bread crumbs.
- Bake the casserole, covered, for about 30-35 minutes, or until the top is golden brown and the casserole is bubbling.
